Welcome to the Wild Wild West

I like creating things you would typically order at a restaurant. A popular favorite of J's is the Southwestern Salad, Tex-Mex Salad, Santa Fe Salad, the names can go on and on. All I know is that I had to recreate it at home!

I call my version the...

Wild Wild West Salad
(because I'm missing the west coast)

Ingredients:

For the Salad:
Romaine Lettuce
Cherry Tomatoes
Cucumber
Bell Pepper
Grilled Corn
Avocado (KEY INGREDIENT :) )
Red Onion
Shredded Cheese
BBQ Chicken cut into strips
Tortilla Strips

For the Dressing:
Ranch
Canola or Vegetable Oil
Lime Zest
Lime Juice
Garlic
Cilantro
White Balsamic Vinegar

1. Chop all the vegetables to desired size and place in big mixing bowl.

2. Cut tortillas into thin strips and fry in canola oil until crispy. Let cool on a paper towel.

3. For the dressing blend all ingredients in the blender until smooth. I used frozen garlic and frozen cilantro from Trader Joe's. They are perfect for dressings!

4. Combine all ingredients and dress well. Sprinkle tortilla strips on top and enjoy!!

  2. You can come to the West Coast and make this for me ANY DAY!!! I'm sure Roman would be a fan too...he loves the Santa Fe salad from Cheesecake Factory!!!
