Lately I've been on a cauliflower kick. It's really just so tasty, versatile, and so much better than broccoli. I have a few ideas I want to try with cauliflower like a roasted garlic cauliflower mash and breaded/ fried cauliflower with an awesome dipping sauce of some sort.
I made a Cauliflower Couscous side dish last week to go along with my Mediterranean themed dinner!
Cauliflower Couscous
Ingredients:
Israeli Couscous
Cauliflower
Raisins
Shallots
Parsley
Cinnamon
Cumin
Olive Oil
White Balsamic Vinegar
Lemon Juice
This recipe is all based on tasting as you go. You can add as little or as much as you'd like of each ingredient.
1. Cut Cauliflower into bite sized florets. Drizzle with olive oil, salt and pepper and place in a roasting pan. Roast for 20 minutes on 400 degrees.
2. In a pot, saute couscous and shallots in olive oil until slightly browned. Cook couscous with chicken broth or water according to directions on the package.
3. Combine cooked cauliflower and couscous with spices and stir well.
4. Place mixture in a bowl and let it cool to room temperature. Then add raisins, chopped parsley, lemon juice, white balsamic vinegar, salt and pepper.
This dinner also included:
Filet Mignon Tips marinated with whole garlic clove, cumin, paprika, and olive oil.
Mediterranean Salad with simple Lemon Vinaigrette
(lemon juice and zest, olive oil, dijon mustard, honey, salt and pepper)
So delicious!

I don't really like raisins, so I was a bit skeptical before eating this couscous. I had no idea how flavorful they get when mixed with other spices and I really did feel like I was back in Egypt eating some Mediterranean food. It was delicious.
ReplyDeleteI love cauliflower also!! I actually packed rice and cauliflower patties for lunch today :). This recipe is so simple and looks so yummy I might have to make this for the family this week!
