Gatherings

I'm BACK and ready to post!

I recently went to the Hollywood Bowl to see Jack Johnson in concert. It was my first visit to the "Bowl" and I really had no idea what to expect. In my head I sort of thought it was a huge grassy hill that overlooked seats which overlooked the stage. To my surprise it was all seats/ benches! Our seats were at the first row of the last section. Nosebleed section is an understatement. Regardless we had a great time and I made a delicious greek orzo pasta salad!

These were all my ingredients:
-Orzo pasta cooked and drained
Then I chopped the following veggies to toss in
- Tomatoes
-Cucumber
-Red Onion
-Kalamata Olives
- Roasted Bell Peppers
- Green Bell Pepper
- Crumbled Feta
-Fresh flat leaf parsley

I tossed all the ingredients together and dressed it with my usual lemon vinaigrette (olive oil, lemon juice/ zest, honey, dijon mustard, and salt&pep)

I made a HUGE batch to bring and some for lunch the next day! :)


Sunday rolled around and I was pretty excited to go to my FIRST DG alumni event. It was a lunch at an Alums house close by. We were all told to bring something, so I brought

Summer Harvest Roasted Tomato and Cheese Tarts

To start, I roasted the tomatoes which take sort of a long time.

Tomatoes:
Take a plastic container of Grape Tomatoes and season with
1 tablespoon of Dried Italian Herbs
Salt& Pep

Space out evenly on a baking sheet and roast in a 425F oven until they burst and the juices around the tomatoes have sort of caramelized. This can take up to 40 min.

Cheese:
In a bowl mix together:
1 cup Ricotta Cheese
1 cup Fontina Cheese (shredded)
1/4 cup Parmesan Cheese (grated)
2-3 tablespoons of Purchased Basil Pesto

I used Pepperidge Farm's frozen Puff Pastry Shells:

Once they were cooked I spread the cheese over the slightly warm pastry shells and topped them each with a few roasted tomatoes. I got a lot of compliments so it's safe to say these turned out great and were perfect for a gathering. :)
