Pat-a-cake Pat-a-cake Nicole-can't-bake!

After a long over due entry I decided to whip together a short little entry on the very few times I've baked in the past few months.

I do apologize if you are ACTUALLY one of the people that enjoyed reading my blog and kept seeing the same thing for the past 2 months.

Let me justify: I graduated college, moved back home to Los Angeles, got a full time job at an interactive marketing agency (7am-4pm UGH!), and began a long distance relationship! Might I add this is all within one month. That's just about enough to keep me from blogging.

Not everything I make I'm proud of. I don't see a point in sharing only the good. Why not show the bad and the ugly too?

For example these cookies I made for Jesse's surprise birthday party.

The only part I'm proud of are the colors and shapes I used to match his favorite hobby. Actually, they did taste pretty good if you get over the fact that your teeth turned black from the black food coloring.

I love cupcakes. I really do. But please tell me why my hand is not skilled enough to frost? It really shouldn't be that hard. I tried to get creative with my limited resources.

I combined food coloring to create pretty pastel colors, and made stencils for letters using parchment paper scissors and a pencil! I found random ingredients like cocoa powder, chocolate chips, and blue crystallized sugar.
I made two different types frosting: butter-cream and whipped-cream, both equally as tasty.

*May I recommend not frosting with fresh whipped-cream as it is very timely since it needs to be kept cold.

Last but not least... 7 layer bars. The name is still a mystery.

1. GrahamCracker Crust
2. Peanut Butter Chips
3. Semi- sweet Chocolate Chips
4. Sweetened Coconut Flakes
5. Chopped Walnuts
6. Condensed Milk

(In a Pyrex, in this order, baked for 35ish minutes at 350°, and it's heaven)

But where is the 7th layer? It may be the butter you mix with the graham cracker crumbs to press out the crust. Who really knows? The only important thing is the way they melt in your mouth. But watch out these bars are VERY dense! I cut them into veryyyy small squares. I've made this recipe twice. Once for Jesse's surprise party and the second time I wrapped them in cellophane with a cute bow and gave them as a thank you to ABC 10 News when I interned there. I was told they were devoured in minutes.



That's all for now...I promise it won't take another 2 months!
