When deciding what to name this entry I remembered a quote somewhere in the back of my mind, "Come hell or high water." Did I remember what this quote meant? No. Did I google it? Yes.
Basically it means, you are determined to do it even if it is difficult. Well I faced a lot of set backs last Thursday night when I had 8 people come for dinner. Normally this would only be a little bit of a challenge but still fun. I had to deal with a clogged sink...BOTH SIDES. We couldn't even turn it on! Disaster number 1. Then when I started to unwrap the chicken breasts I realized I got the fatiest chicken or lets just say thickest pieces I have ever seen. Much to my dismay I was flustered and almost threw in the towel...literally. Luckily Jesse was there to calm my nerves and shortly after my sister arrived to help.
For the dinner party I (actually we) made:
- Chicken breast rolled with a ricotta parm spinach mushroom filling.

I made a pan sauce that was really easy to make and tasted soooo good! Basically add wine and flour!

I also made bruschetta and now come to think of it I also made a salad and roasted potatoes. It was a night I can't really remember...too much wine or too much stress. Who knows?
I believe there were a number of shots with a dripping balsamic reduction that SOMEONE spent a long time making look just right. Other then that, everything looks delish. Re-do in sf soon?
