I say Kumato you say Tomato

I know what you're thinking, that's not how the saying goes. It will after you try a delicious Kumato. I had never seen these deliciously "brown" tomatoes until last week. On a usual trip to Trader Joe's I spotted them in the produce section. Their description listed them as sweeter than your average tomato. Just what I wanted. A sweeter than usual tomato. :)

I decided to make something that would highlight their sweet taste.

Bruschetta with Truffle Basil Spread

This recipe is very easy and can be made in under 10 minutes!

Ingredients:

4 Kumatoes
3 cloves of Garlic minced
2 cubes of frozen Basil (can be found at Trader Joe's)
2 tablespoons of Balsamic Vinegar
1 tablespoon of Olive Oil
1 tablespoon of Truffle Oil
Salt and Pepper to season
1 French Baguette thinly sliced

1. Add diced Kumatoes, minced Garlic, Olive Oil, and Balsamic Vinegar into a large mixing bowl. Season with salt and pepper.

2. In a small bowl, combine frozen cubes of basil and truffle oil. Stir vigorously until frozen basil and oil are thoroughly incorporated and have created a thick green sauce.

3. Cut the baguette into thin slices at an angle. Toast slices in a toaster or oven until slightly golden brown and crisp.

4. Spread a small portion of Truffle Basil spread on each toast. Careful not to overload the spread since it is very highly infused with truffle. You don't want it to overpower the Kumatoes.

5. Spoon Kumato and Garlic mixture on each slice of toast.

Optional: Garnish with shaved parmesan cheese! Yum!

  1. Never knew what a Kumato was until now...they are so brown they almost look like eggplants!You definatley know how to write a great blog post...I'll think of you and the Kumatoes everytime I'm in Trader Joe's from now on.
