Baked Eggs in a Linguine Basket
Ingredients:
This was a dinner for one, so just adjust the recipe to how many people you're cooking for.
1 serving of Pasta cooked al dente
2 Tblsp Unsalted Butter
1 Tsp Truffle Butter
1/2 Tsp chopped Garlic
1 Egg
1/4 cup Parmesan Cheese
1 Tblsp Fresh Parsley
1 Tblsp Fresh Green Onion
This may just be one of the simplest yet indulgent meals you can create. Okay so it may give you a heart attack and cholesterol overload, but it probably will be on your list for hangover cures. :)
1. Melt butter and truffle butter with garlic in the microwave. (Yes, I know how easy!)
2. Take the cooked pasta and arrange in semi deep casserole dish. Twist pasta around a fork to create a well in the middle. Pour melted butter and garlic all over the pasta.
3. Crack an egg in the center of the pasta nest.
4. Top with parmesan cheese and green onions. (Reserve some of the parmesan cheese for topping at the end as well)
5. Cover casserole dish with lid or aluminum foil. Bake at 350° for 15-20 minutes, depending on how runny you want your yolk.
6. Carefully take out your dish and sprinkle parsley and remainder of cheese on top.
The runny yolk, with the truffle butter, herbs, and perfectly cooked pasta is a mouthwatering combination.

ReplyDeleteAlso...did you know that there is egg noodles (kinda like pasta) you can have on passover? Just had it tonight with tomato sauce and cottage cheese!
