Burrata Station

This one goes out to my love. :) J and I have been dating for 2 years today!

The title Burrata Station is just a silly name he once said after I expressed my love for burrata cheese. I've posted about it before with my antipasto platter. It truly is the most indulgent yet simple cheese. I was happy to hear this weekend that my sister enjoys the cheese just as much as I do.

So at a family brunch this weekend I made:

Burrata Caprese Salad- with a lemon basil paste and balsamic glaze

It was so simple and literally took 10 minutes.

Ingredients:

Burrata Cheese
Roma Tomatoes
Arugula
Olive Oil (I used Lemon infused Olive Oil)
Balsamic Glaze
Not pictured (oops): frozen chopped basil in cubes (find it at Trader Joe's)

Defrost 3 cubes of frozen basil in a bowl. Slowly pour in lemon infused olive oil and stir vigorously. Set aside for garnish at the end.

Next, dress your bed of arugula. Scatter a hefty amount of arugula on the bottom of a serving dish. Coat well with olive oil, salt and pepper.

Then slice your tomatoes into about 5-6 thin slices per tomato.
Do the same with the burrata cheese. Don't be alarmed when the creamier cheese pours out a bit. Just scoop it up with a spoon when assembling.

Arrange your tomatoes and burrata atop the dressed arugula. Layer the tomatoes and burrata in any fashion you'd like. I made 3 straight lines, but you could attempt a circle as well.

Use the lemon basil paste you created earlier to garnish the top of the salad. Drag a spoon across and be sure to evenly distribute the garnish to the entire row.

Your last step will be to drizzle the entire platter with the balsamic glaze. I just went up and down the plate creating zig zag lines.

This really is a fantastic and easy salad. It looks impressive too!

  2. I loved the pesto and glaze with this-- a great addition. I also think you should try to make the burekas that were served with this from scratch... let me know the recipe if you do :)

  3. @Bec - Burrata is actually buffalo mozzarella cheese, it is just filled with cream as well. :)
