Moving home after college has been a whirlwind experience. You've heard the expression a walk in the park? Well this has been a lap in the olympics. Well...maybe not that exciting or hard, more like a jog on the treadmill. Ya, that works. Anyway, I have been trying to get accustomed to living back at home, and managing a full time job that is definitely not what I call my dream profession but it's getting there and it's definitely a step in the right direction (to one day work for the food network :)) . Over the past few months I've come to appreciate food and cooking to a point where it can put a HUGE smile on my face. I give props to anything that can do that!
We've recently changed my dad's diet to make him healthier! Although I only cook for him on occasion it has definitely changed the way I cook when I know he'll be eating! Although this meal is not SO bad (in my eyes) it came from a night far before his diet started. Hence the butter. :)
I dredged the tilapia filets in flour then dropped them into some butter that had already been hanging out with my three best friends.

My mouth is watering a little...

I paired this mouth watering fish with roasted zucchini that I seasoned with garlic and balsamic vinegar, sea salt, and black pepper.
