
It's basically the weekend for me. All I have left is one class and a drive home to Los Angeles. So how do I unwind? I cook my self a great dinner. What amazed me tonight was how quickly I was able to prepare it. My intentions really were not to make this a 30-minute meal...I definitely wasn't screaming "YUM-O" or reaching for the "E-V-O-O", but it took me all about 30 minutes which included some of the clean up.
I made Balsamic glazed Filet Mignon and yes...I cheated...I made a pre-packaged Mushroom Risotto. It was just too good to pass up. I'll begin with the Risotto.
Archer Farms has a line at Target! I randomly passed these things on my way out and the prices were right. I also like that the serving size was just for two rather than 4-6 like most packaged meals. It was $2.99 for this great box of mushroom risotto.
It was really easy to make and really was delicious!

When it was done I added a little bit of butter, freshly grated Parmigiano-Reggiano, and fresh flat leaf parsley.
I learned a great technique on food network for chopping herbs.
Grab a handful of the herbs into your palm.


Roll the herbs into a sort of compact log and begin chopping very finely.

As for the Filet Mignon...I butterflied the fillet for a quicker and more thorough cooking time. I added my favorite grill seasoning and marinaded it in balsamic.
I also sliced a golden pearl onion in rings for grilling as well.


I then used my favorite Le Creuset grill pan. Its perfect for indoor grilling!

I plated up my yummy dinner with the risotto on the bottom filet in the middle and onions on top...Perfection!
