Kale is the New Spinach

For those of you who watch Modern Family, you might recognize the title of this post. Unfortunately I would have to disagree! Spinach is just the best and if I could I would remake this recipe with spinach.

The Kale and the Onions are both organic and fresh from a farm somewhere close by in Virginia. I got a LivingSocial deal that turned out to be more expensive than just buying all organic at Whole Foods.

Nevertheless, the ingredients had to be used. That's how I came up with Kale and Sausage Ravioli with a Roasted Pepper Cream sauce.

I know what you're thinking...that sounds too complicated. Well it honestly wasn't and I'm here to show you a few shortcuts!

Ingredients:

1 1/2 cups of chopped kale
1 cup of chopped onions
2 cups of ground chicken sausage
1/2 cup parmesan cheese
won ton wrappers

Sauce:
1 jar of roasted peppers (with juice)
3 cloves of garlic minced
1/2 cup chopped onions
1/2 cup white wine
2 tablespoons pesto
1/3 cup heavy cream

1. For the sauce make this ahead of time and leave simmering on the stove as you prepare ravioli. Start by sauteing onions and roasted peppers.

2. Then add the garlic, salt and pepper, and white wine. Let it cook until wine has reduced and alcohol smell is not so strong. Or leave it strong if you're into that. :)

3. Transfer ingredients from the pan into a bowl, container, or blender. My blender sucks so I used my hand blender to puree up this beautiful sauce.

4. Once smooth, transfer back to sauce pan and add heavy cream and pesto.
Stir until well incorporated and simmer until you're ready to use it.

Ravioli:

1. Saute onions and sausage with a small amount of olive oil.

2. Add Kale once onions are translucent and cook until Kale has wilted slightly. Transfer to a bowl and add cheese.

3. Place 1 won ton skin on a dry surface and scoop 1 hefty teaspoon onto middle of won ton. Using your finger and wet the 4 sides of the won ton with water.

4. Place another won ton on top and press into 4 edges making sure to press out any air and that it is sealed tightly.

5. Place Ravioli carefully into boiling salted water. Be sure not to overcrowd the pot. Use a slotted spoon to carefully remove each ravioli after 5-6 minutes.

The sauce is just delicious and look how easy it is to make homemade ravioli with won ton wrappers!

  1. This was delicious and I am so happy that I get to be the food taster extraordinar. The bell pepper cream sauce was tangy and the kale sausage ravioli was the perfect combination with it.

  2. Great job! This kind of reminds me of the butternut squash ravioli I had over the weekend. Yummy!!! You never cease to impress me :D
