The little chocolate bark that could

If you know me, you know I take this whole blogging thing REALLY seriously. I really thought this post wasn't going to happen tonight when I couldn't find my memory card with all the pictures. Thankfully I found it just in time! Like I promised, a new post every Monday night...I'll try to never let my loyal readers down!

'Tis the season...so I went with a holiday theme!

White Chocolate Bark with
Peppermint Candies & Mini Marshmallows

This is such a SIMPLE dessert to make. It's great to bring for holiday parties in a cute tin can (shown above) or maybe to put out for Santa instead of his usual milk and cookies. Look at me talking like I celebrate...we all know I eat chinese food and go to the movies. ;)

The only tools you'll need are:
Microwave
Cookie sheet lined with foil
Spatula
Glass bowl

Ingredients:

1 Pound of chocolate
1/2 cup of Peppermint candies crushed
1/2 cup of Mini Marshmallows

(great way to get out some anger)

Make sure you have all your toppings set aside and ready for action. Microwave your chocolate in a glass bowl for 30 seconds, then stir with a spatula. Continue microwaving and stirring in 30 second intervals until your chocolate is melted and has a glossy look to it.

Pour the chocolate onto the foiled baking sheet and use your spatula to spread it in a thin circle about 1/4 inch thick.

While the melted chocolate is still warm add your toppings, make sure they are really set in there. Don't be afraid to push them down a bit and get your fingers dirty!

Let them set for an hour...or if you're super inpatient like we were we put them in the freezer for 20 minutes. Bring them out and break away beautiful pieces, creating your tasty bark!

When you bite into this bark you get a bit of peppermint crunch, smooth white chocolate, and chewy marshmallows. It truly is a winning combination.


The fun part about this recipe is that you can really mix 'n match!
I personally do not like chocolate...I know, WHAT?!?! How can this be? Don't ask. BUT I love white chocolate. I created a few other flavors for some lucky people.

I tried a marble technique which was actually very easy. Just pour even amounts of both types of chocolate side by side. Then take your spoon and swirl them together.
